DESCRIPTION
Finca Los Delirios is one of Nicaragua’s most celebrated coffee estates, operated by the Canales family—true pioneers of organic specialty coffee in the country. Originally purchased in 1958 by Don Pío Canales, the farm has grown over the past half century into a nearly 400‑acre operation that also includes the neighboring Fincas Borbollón and San Antonio.
The Canales family first gained international recognition in 2004 with a Cup of Excellence win for a purely organic coffee, setting a new benchmark for Nicaraguan coffee on the global stage. Today, Don Pío’s grandsons—Norman, Milton, and Daniel—continue that legacy, running Los Delirios as a fully organic operation with the same dedication to quality and environmental stewardship.
Los Delirios is uniquely self‑contained, operating its own wet mill, dry mill, and hundreds of raised, shaded drying beds. The family produces their own organic fertilizers using cattle manure along with coffee parchment and pulp, closing the loop between harvest and soil health. This thoughtful, hands‑on approach allows for exceptional control over quality from cherry to export.
Grown between 1,250 and 1,450 meters above sea level, this washed lot highlights the clarity and balance Nicaragua is capable of producing at its best. In the cup, you’ll find a composed, comforting profile—milk chocolate sweetness layered with pecan pie richness, bright notes of red fruit, and a gentle citrus lift reminiscent of lemon tea. Wafer‑cookie softness rounds out the finish, making this a versatile and approachable coffee that still rewards a slower sip.
