DESCRIPTION

Evelina Pereyra de Carrion was born in southern Peru's Yanatile district in La Convencion. She grew up helping her family on their farm and learning coffee plant care. At a very young age, she bought her first land, planting Typica seedlings from her neighbors.

She has always been proud of her ability to use coffee to provide for her family, including her only daughter, Rita. Through coffee she was able to pay for her daughter's education and build a house on the farm.

She now grows Bourbon, Typica, and Caturra varieties on her farm, Santa Elena, in the Santa Teresa district. She handles all the wet processing by herself. After a careful harvest she ferments her coffee over 16-18 hours in cement tanks, then dries the parchment on cement patios for 8-10 days.

She uses native leguminous ice-cream bean trees between the coffee plants for shade and mules for transportation.

Santa Teresa sits at the base of the Templo de La Luna on the Urubamba river, all within the larger region of Cusco in southern Peru. This special lot gets its name from the highest peak in Cusco, Salkantay—6,271 meters above sea level. 

It is from the waters of this mountain, probably one of the purest bodies of water in the world, that the people of the town of Salkantay survive. This same water runs throughout all the farms, enriching and nourishing crops and producing superb quality.
