Sulawesi Celebes – Toraja Coffee

Explore Sulawesi Toraja coffee, grown in the highlands of Tana Toraja, where mountain slopes reach up to 2000 meters. Introduced by the Dutch East Indies Trading Company in the 1700s, this coffee — historically called Celebes — is cultivated by smallholder farmers in a unique microclimate of mild acidity, wet humidity, and dramatic temperature swings.

This lot features Catimor (Adungsari) and S-795 (Jember) varieties, prized for disease resistance and natural sweetness. Using the traditional Giling Basah (wet-hulled) method, the beans develop a deeply satisfying cup: full-bodied richness, notes of pipe tobacco, plum, chocolate, spice, and earthy undertones, with a citric sweetness and smooth, soft finish. Sulawesi coffee is known for its aromatic spiciness, creamy texture, and balanced low acidity.

Much of the coffee is grown wild, tucked wherever trees can thrive, producing beans that are hand-sorted to strict Grade 1 standards for clarity and cleanliness in the cup.
